Hearty Tinola: A Flavorful Filipino Soup

Tinola is a traditional Filipino soup known for its comforting, savory flavors and aromatic broth. Traditionally made with chicken and green papaya, this vegan version uses plant-based ingredients while preserving the essence of this beloved dish.

Ingredients for 4 Servings:

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, sliced
  • 1 block (14 oz) firm tofu, cubed
  • 1 tablespoon soy sauce
  • 4 cups vegetable broth
  • 1 cup water
  • 1 medium green papaya, peeled and sliced into wedges (or substitute with 1 large zucchini, sliced)
  • 1 cup baby spinach or moringa leaves (malunggay)
  • 1 cup green beans, trimmed and cut into 2-inch pieces
  • 1 tablespoon miso paste (optional, for added depth)
  • 1 teaspoon black pepper
  • Salt, to taste

Instructions:

  1. Prepare the Tofu: Heat vegetable oil in a large pot over medium heat. Add tofu cubes and cook until golden brown. Remove tofu from the pot and set aside.
  2. Cook Aromatics: In the same pot, add onions, garlic, and ginger. Sauté until onions are translucent and the mixture is fragrant.
  3. Build the Broth: Pour in vegetable broth and water. Stir in soy sauce and bring to a boil.
  4. Add Papaya: Add the green papaya (or zucchini) and cook for 10 minutes, or until the papaya is tender.
  5. Add Vegetables: Add green beans and cook for an additional 5 minutes.
  6. Return Tofu: Add the cooked tofu back into the pot. Simmer for 5 minutes to allow flavors to meld.
  7. Season: Stir in miso paste if using, and season with black pepper and salt to taste.
  8. Add Greens: Add spinach or moringa leaves and cook until wilted, about 2 minutes.
