Tinola is a traditional Filipino soup known for its comforting, savory flavors and aromatic broth. Traditionally made with chicken and green papaya, this vegan version uses plant-based ingredients while preserving the essence of this beloved dish.
Ingredients for 4 Servings:
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized piece of ginger, sliced
- 1 block (14 oz) firm tofu, cubed
- 1 tablespoon soy sauce
- 4 cups vegetable broth
- 1 cup water
- 1 medium green papaya, peeled and sliced into wedges (or substitute with 1 large zucchini, sliced)
- 1 cup baby spinach or moringa leaves (malunggay)
- 1 cup green beans, trimmed and cut into 2-inch pieces
- 1 tablespoon miso paste (optional, for added depth)
- 1 teaspoon black pepper
- Salt, to taste
Instructions:
- Prepare the Tofu: Heat vegetable oil in a large pot over medium heat. Add tofu cubes and cook until golden brown. Remove tofu from the pot and set aside.
- Cook Aromatics: In the same pot, add onions, garlic, and ginger. Sauté until onions are translucent and the mixture is fragrant.
- Build the Broth: Pour in vegetable broth and water. Stir in soy sauce and bring to a boil.
- Add Papaya: Add the green papaya (or zucchini) and cook for 10 minutes, or until the papaya is tender.
- Add Vegetables: Add green beans and cook for an additional 5 minutes.
- Return Tofu: Add the cooked tofu back into the pot. Simmer for 5 minutes to allow flavors to meld.
- Season: Stir in miso paste if using, and season with black pepper and salt to taste.
- Add Greens: Add spinach or moringa leaves and cook until wilted, about 2 minutes.
Tip: For an extra layer of flavor, consider adding a splash of coconut milk during the last few minutes of cooking for a creamy twist that complements the broth’s savory profile.
