Ingredients for 4 Servings:

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, sliced

  • 1 block (14 oz) firm tofu, cubed
  • 1 tablespoon soy sauce
  • 2 tablespoons tomato paste
  • 1 cup vegetable broth
  • 1 cup water
  • 1 large potato, peeled and cubed
  • 1 large carrot, peeled and diced
  • 1 cup red bell pepper, sliced
  • 1 cup green peas
  • 1 cup olives, sliced (optional)
  • 1 tablespoon miso paste (optional, for extra umami)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Tofu: Heat vegetable oil in a large pot over medium heat. Add tofu cubes and cook until golden brown. Remove tofu from the pot and set aside.
  2. Cook Aromatics: In the same pot, add onions, garlic, and ginger. Sauté until onions are translucent and fragrant.
  3. Add Tomatoes: Stir in the chopped tomato and cook until softened.
  4. Build the Sauce: Stir in tomato paste and cook for 2 minutes. Add vegetable broth, water, soy sauce, miso paste (if using), paprika, and oregano. Bring to a boil.
  5. Simmer Vegetables: Add potatoes and carrots to the pot. Reduce heat to low and simmer for 15 minutes, or until vegetables are nearly tender.
  6. Add Remaining Ingredients: Add red bell pepper, green peas, and olives (if using). Continue to simmer until all vegetables are tender and flavors are well combined, about 5-10 more minutes.
  7. Return Tofu: Add the cooked tofu back into the pot and stir gently to combine. Adjust seasoning with salt and black pepper to taste.
