Kaldereta is a popular Filipino stew known for its rich, hearty flavors and tender meat, often slow-cooked with a tomato-based sauce. This vegan version maintains the comforting essence of the dish by using plant-based ingredients to deliver a satisfying and flavorful meal.
Ingredients for 4 Servings:
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, sliced
- 1 large tomato, chopped
- 1 block (14 oz) firm tofu, cubed
- 1 tablespoon soy sauce
- 2 tablespoons tomato paste
- 1 cup vegetable broth
- 1 cup water
- 1 large potato, peeled and cubed
- 1 large carrot, peeled and diced
- 1 cup red bell pepper, sliced
- 1 cup green peas
- 1 cup olives, sliced (optional)
- 1 tablespoon miso paste (optional, for extra umami)
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions:
- Prepare the Tofu: Heat vegetable oil in a large pot over medium heat. Add tofu cubes and cook until golden brown. Remove tofu from the pot and set aside.
- Cook Aromatics: In the same pot, add onions, garlic, and ginger. Sauté until onions are translucent and fragrant.
- Add Tomatoes: Stir in the chopped tomato and cook until softened.
- Build the Sauce: Stir in tomato paste and cook for 2 minutes. Add vegetable broth, water, soy sauce, miso paste (if using), paprika, and oregano. Bring to a boil.
- Simmer Vegetables: Add potatoes and carrots to the pot. Reduce heat to low and simmer for 15 minutes, or until vegetables are nearly tender.
- Add Remaining Ingredients: Add red bell pepper, green peas, and olives (if using). Continue to simmer until all vegetables are tender and flavors are well combined, about 5-10 more minutes.
- Return Tofu: Add the cooked tofu back into the pot and stir gently to combine. Adjust seasoning with salt and black pepper to taste.
Tip: For a richer flavor, you can add a splash of coconut milk during the last few minutes of cooking to give the stew a creamy, luxurious texture.
