Sinigang is a popular Filipino sour soup known for its vibrant and tangy flavor. Traditionally made with pork or shrimp, this vegan version swaps out animal proteins for vegetables while preserving the signature sour taste that defines this comforting dish.
Ingredients for 4 Servings:
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 large tomato, chopped
- 1 block (14 oz) firm tofu, cubed
- 1 tablespoon tamarind paste (or 2-3 tamarind pods, if available)
- 4 cups vegetable broth
- 2 cups water
- 1 cup radish, sliced
- 1 cup eggplant, diced
- 1 cup green beans, trimmed
- 1 large potato, peeled and cubed
- 1 cup spinach or kangkong (water spinach)
- 1-2 tablespoons soy sauce (to taste)
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper
Instructions:
- Prepare the Tofu: Heat vegetable oil in a large pot over medium heat. Add tofu cubes and sauté until golden brown. Remove tofu from the pot and set aside.
- Cook the Aromatics: In the same pot, add onions and garlic. Sauté until onions are translucent and garlic is fragrant.
- Add Tomatoes: Add the chopped tomato and cook until it starts to soften.
- Make the Broth: Pour in the vegetable broth and water. Stir in tamarind paste (or tamarind pods) and bring to a boil.
- Simmer Vegetables: Add radish, eggplant, green beans, and potato to the pot. Reduce heat to a simmer and cook for 15-20 minutes, or until vegetables are tender.
- Return Tofu: Add the cooked tofu back into the pot. Simmer for an additional 5 minutes.
- Season: Stir in soy sauce, salt, and pepper to taste.
- Add Greens: Add spinach or kangkong and cook until wilted, about 2 minutes.
Tip: For an extra layer of flavor, try adding a few slices of fresh chili or a dash of fish sauce (vegan or regular) to the broth for a hint of heat and depth.
Serving Suggestions:
Serve your vegan Sinigang hot with steamed rice or rice noodles for a complete meal. To prepare rice, rinse it under cold water and cook according to package instructions or using a rice cooker. For added freshness, consider pairing with a side of pickled vegetables or a simple cucumber salad to complement the tangy flavors of the soup. This hearty dish is perfect for family dinners or gatherings.
